Torrijas recipe

Torrija is a sweet of European origin with a long tradition in Spain. It consists of a slice of bread (usually several days) that is soaked in milk or wine and, after being battered in egg, fried in a frying pan with oil. It is sweetened with honey, molasses or sugar and flavoured with cinnamon. It's similar to French toast.
Ingredients
-A loaf of bread (daytime or hard, let's dismantle the myth).
-600 ml. of milk (whole, semi or skimmed, whichever you prefer).
-3 eggs.
-Cinnamon stick.
-100 gr. of sugar.
-Olive oil.
Steps
1- In a saucepan, boil the milk with 2 cinnamon sticks and sugar. While the milk is heating, cut into slices of about 2 cm. the whole loaf of bread.
2- The more recent the bread is, the less time it should be immersed in milk. Two types of bread (peak and water) have been used in this production, none of them special for torrijas and both were bought the same day the recipe was made.
3- Once the milk with cinnamon sticks and sugar has come to the boil, we pour it into a deep dish where we will then soak the slices of bread. Prepare another deep dish and beat the three eggs.
4- Heat the frying pan with the oil, over high heat so that the torrijas are made quickly and do not drizzle with oil. With the hot oil in the frying pan and the beaten egg prepared in another dish, let's dip the slices of bread in the milk dish.
5-You don't have to throw them all in at once, you'd better go little by little so that they get wet. Remember, depending on the hardness of the bread, they should stay in the milk for a short time.
6-When they are soft but without crumbling, we take one by one and batter them in the beaten egg, and from there we pass them to the oil.
7- Fry the torrijas in the oil
8- When they are browned on one side, turn around and hopefully they are browned on the other side
9- Once toasted, we take them out to a dish or container in which we have previously placed kitchen paper to drain the rest of the oil from the torrijas.
It's important!
As soon as you put the torrijas on the plate, you have to do two essential steps: crush them with a spatula and sprinkle them with cinnamon. Some people don't like cinnamon, so you can use sugar.
